What are the Ingredients required?

  1. 1 and ¼ cups of rice flour
  2. ½ tsp of cumin seeds (jeera)
  3. ½ tsp of carom seeds (ajwan)
  4. 2 pinches of asafoetida (hing)
  5. 1 tbsp of sesame seeds (til)
  6. 1 tsp of red chilli powder
  7. ½ tsp of turmeric
  8. 2 tbsp of soft butter
  9. Salt to taste
  10. Water
  11. Oil

Steps to make Instant Murukku

  1. Take a mixing bowl and sieve the rice flour. You can use homemade or store-bought rice flour, whichever is available to you.
  2. Add in all the spices – turmeric, chilli powder, cumin, carom seeds, black sesame seeds, hing, ajwain and salt, and mix them.
  3. Then, add soft or melted butter to the flour and spice mix and mix well. Crumble the mix to coat it properly with butter.
  4. Slowly add water to the flour mix to knead the dough. Do not add excess water, as that will make it sticky.
  5. On the other side, take a frying pot, pour in the oil required for frying, and place it on medium heat.
  6. Now, take the murukku press and place the star-shaped mold at its bottom. Grease it with oil to let the dough easily slide through the hole of the star mould.
  7. Take a portion of the dough, place it into the press and tighten the lid. Remove circular-shaped murukkus on a wet cloth or butter paper. Do ensure that the ends are sealed to prevent them from breaking while frying.
  8. Slide the murukku into the hot oil one at a time.
  9. When one side turns golden brown, flip it and allow the other side to cook until it becomes crispy.
  10. Remove them from the oil and place them on a tissue-covered plate to let them soak excess oil.
  11. Store them in an air-tight container to enjoy the crispy instant murukku for the next couple of weeks.
  12. Devour it with hot masala chai or filter coffee.

Tips To Remember While Cooking

  1. Use finely powdered rice flour and not coarsely powdered.
  2. Add 1 tsp of oil while kneading the dough to make the murukku more crispy.
  3. The dough should be soft and non-sticky. Add extra rice flour to remove any stickiness.
